Cool, Clean Feeling Menthol is the most important flavoring chemical. Without menthol it would be difficult to get that cool clean feeling when we brush our teeth or chew gum. Cough syrups and drops wouldn't cool the throat and open nasal passages. World Wide Production of Menthol In 2007, it was estimated that production of menthol was in excess of 19,000 metric tons.  Because of it's importance, there is a huge demand for this flavor chemical. It is a natural material and therefore subject to price fluctuations as a result of envrionmental conditions. Methyl salicylate, Artificial Wintergreen oil (FEMA 2745)

Aspirin conversion to Methyl salicylate A standard lab experiment in organic chemistry is to convert aspirin(acetylsalicylic acid) to Methyl salicylate. Methyl salicylate(FEMA 2745) is an ester which smells sweet, is strong, is approved for use in food and is the characterizing flavor of wintergreen. Wintergreen flavor is very popular in the United States. Countries like Japan and Italy think it's most suitable for cleaning bathrooms, but not for eating.   My Impression Personally, Wintergreen is one of my favorite flavors. Stride Shaun White mintacular artificially flavored sugar free chewing gum

Mintacular? Shaun White is spectacular, but the chewing gum mintacular is not. It warms anyone's heart to hear the story of  Shaun White overcoming a heart defect and eventually become an Olympic athlete. Mintacular, however, is just ANOTHER spearmint and melon artificially flavored chewing gum. The flavor reminds me of  a cleaning compound or a shampoo, it is very cosmetic. The aqua color seems a bit cosmetic as well. A current trend is spearmint gum is to combine it with an artificial melon flavor. Wrigley’s 5, Cobalt cooling peppermint sugar-free gum now in a jar

Wrigley's 5 Cobalt cooling peppermint sugar-free gum is an extremely popular gum. I had several requests to copy this flavor when I was in the industry. Wrigley decided it was popular enough that it would need a dragee form (candy coated pellet gum) and a jar. Thank you Wrigley! The taste of the candy coated pellet gum is a little different from the stick form of Wrigley's 5 Cobalt. The pellet form has much more initial cooling character, less sweet and slightly oxidized (pine needle character). It's still a great gum to freshen your breath, but harsher than the stick form of Wrigley's 5 Cobalt. I'm interested in seeing Wrigley's 5 Rain (Spearmint) in a jar as well. Stride Tropical Trance, artificially flavored sugar free gum, Flavor Review

Be careful,because Stride Tropical Trance will hold you captive for a half hour. Tropical Trance has high flavor impact that lasts at least 20-30 minutes. This gum is shocking: high in sour, sweet, tropical flavor and cooling sensation. I'd describe the flavor as a very creamy mango with orange, pineapple, green cucumber and floral notes. The creamy notes are very high and I much prefer this gum after those flavor notes have dissipated. Twenty minutes into chewing Tropical Trance, I find it to be a delicious fruitty berry gum that is cooling. Project 7 sugar free Fresh mint gum, flavor review

I'm a sucker for helping others on a global scale. Usually, I consider help writing checks to reputable organizations. Do I think buying gum will help the world?  Not really. Especially this gum. There is nothing unique about Project 7 gum and it tastes bad, like it's been a hot car all summer.  Will Project 7's goal of one million new fruit tree plantings in Guatemala, El Salvador and Nicaragua change much?  Maybe...I'm not certain.  I'd rather write a check, though, than chew this gum. Trident Layers Orchard Peach & Ripe Mango flavor review

As a flavor chemist, I have to applaud the flavorist who made this peach & mango flavor. This is a well-balanced, creamy, tropical, crisp, fruity peach mango flavor and would be very difficult to copy. As a consumer and mom, I am concerned about such high flavor load in a product that children would consume. Typically fruit flavors are a "top note" for beverages or fruit fillings that lose some potency during processing. In confection, though, added fruit flavors are the entire flavor system. Chewing gum in particular has an extremely high flavor load, perhaps 2% vs a piece of candy that has 0.2%.  Flavor load is high because it is desired that gum's flavor last 20 minutes. Orbit wildberry remix sugar free chewing gum review

Often I hear "our world is getting smaller".  When people say that; they are referring to the ease of travel or transportation. How about food and flavor? When I visited Italy 10 years ago, a very popular confection & beverage flavor was forest fruits. Forest flavors is portrayed with pictures of blackberries, blueberries and raspberries and is always somewhat floral. My first impression of the Orbit wildberry remix is that it's forest fruits flavor from Europe. When I opened the packaged and smelled the gum, though, I changed my mind. Orbit Wildberry Remix smells just like grape soda or grape candy flavor for kids. Initially, the gum was juicy, sweet and flavorful. Extra Dessert Delights sugarfree gum Apple Pie review

It's never easy to have a holiday weekend come to an end. Personally, I celebrated with two dinners and lots of left overs. Celebrating involved gorging. There was ham, turkey, mashed potatoes & gravy, stuffing, cranberries,  fresh rolls, appetizers, cheese plates, spinach dip, pumpkin pie and apple pie. My recovery plan is lots of water, exercise and healthy, low-calorie food. It's going to be difficult to resist the homemade apple pie I have in the fridge, though. Dentyne Pure Mint with Citrus Accents review

Safe Breath "Practice Safe Breath"?  A strange tagline, but this new Dentyne Pure does what it claims: my mouth feels very clean & refreshed after chewing. Dentyne Pure Mint with Citrus Accents is a dragee style gum (candy coated pellet) and has a soft liquid center that is bluish-green (like the package). Because this line of gum "purifies your breath", it is called Dentyne Pure. The unique item about this gum is that it has a blend of botanical extracts. I am guessing this blend of extracts is "Neutrafresh". But, I'm not clear about what "Neutrafresh" is.
