Keeping it simple-Fruit Punch Flavor

Simple KISS is an acronym used by scientists and engineers,"Keep it simple, stupid". The KISS principle states that most systems work best if they are kept simple and not made complicated. Basically, simplicity should be a key goal in design and unnecessary complexity must be avoided. Complicated Flavor scientists often add too many unneeded components to a flavor. Why? Because they are artists. Just like chefs, a flavor scientist "throw things in", because it seems like it should improve the flavor or because the ingredient is a favorite. Sometimes a flavor scientist developes a new flavor using other lengthy flavors, like making a blackberry flavor by combining a strawberry, blueberry and raspberry flavor. A finished flavor can … [Read more...]

Dole Fruit Crisp, Peach Review

I regularly stock fruit cups and applesauce cups for the kids. These items are healthy, convenient snacks and meal sides. Recently, I saw a new item on the shelf in this section. This item is Dole Fruit Crisp.  I was turned off by the amount of packaging the product required and the message it sent: "fruit crisp is difficult to prepare; therefore we'll make it for you".  Once I tried the product and saw my child's response, I understood the advantage. It's easy, good and has nutritious ingredients.   A great snack or breakfast to have on hand for a child. Basically, this is a fruit filling cup (thickened with starch) that can be heated and served with an oat topping (oats, brown sugar, sunflower oil, flour, spices, lecithin, flavor and … [Read more...]

Trident Layers Orchard Peach & Ripe Mango flavor review

As a flavor chemist, I have to applaud the flavorist who made this peach & mango flavor. This is a well-balanced, creamy, tropical, crisp, fruity peach mango flavor and would be very difficult to copy. As a consumer and mom, I am concerned about such high flavor load in a product that children would consume. Typically fruit flavors are a "top note" for beverages or fruit fillings that lose some potency during processing. In confection, though, added fruit flavors are the entire flavor system. Chewing gum in particular has an extremely high flavor load, perhaps 2% vs a piece of candy that has 0.2%.  Flavor load is high because it is desired that gum's flavor last 20 minutes. The United States government is very strict about what … [Read more...]

Trident Splashing Fruit review

It's pretty good My eight year old told me, "actually this gum is pretty good" and that basically sums it up. Trident Splashing Fruit is a yellow gum with red flavor crystals and the aroma is much like fruit punch, wonderfully citrusy up front with hints of fruity notes underneath. The first taste impression I got of this gum was sweet. As I chewed, it got tangy and cool (not minty). The syrupy sweetness lingered for several minutes. This is a very sweet gum and it is no wonder my eight year old likes this gum. My impression of the flavor is that it is a mango flavor, very creamy, sweet and tropical.  I am amazed at  how long the flavor lasts and how the sweetness caries through. There is a coolness in the gum that tingles in my … [Read more...]
