Acetaldehyde and Flavor

My Fear Acetaldehyde FEMA 2003 is an aroma chemical that I am scared of. Why? Because I did not follow standard lab safety protocol. I sniffed a bottle of acetaldehyde 100% (neat) directly. (Never, never smell a bottle directly in a laboratory!!! Use the "wafting technique". ) What happened? I nearly passed out and I fell into a chair. I felt sick, had trouble standing up and lost my sense of smell for awhile. This is my only encounter with neat acetaldehyde (20 plus years ago). Now, I avoid it like a child avoids a burner after touching a hot stove. I am afraid of it. Confronting my Fears Occasionally, I decide I have to use acetaldehyde because it is important in good flavors. Many flavors benefit from acetaldehyde: whiskey flavor, … [Read more...]

There’s money in Menthol

Cool, Clean Feeling Menthol is the most important flavoring chemical. Without menthol it would be difficult to get that cool clean feeling when we brush our teeth or chew gum. Cough syrups and drops wouldn't cool the throat and open nasal passages. World Wide Production of Menthol In 2007, it was estimated that production of menthol was in excess of 19,000 metric tons.  Because of it's importance, there is a huge demand for this flavor chemical. It is a natural material and therefore subject to price fluctuations as a result of envrionmental conditions. Natural Menthol Naturally, peppermint oil (Mentha piperita) contains approximately 35-45% menthol and corn mint oil (Mentha arvensis) contains 65-75% menthol. Mentha arvensis is largely … [Read more...]

Project 7 sugar free Fresh mint gum, flavor review

I'm a sucker for helping others on a global scale. Usually, I consider help writing checks to reputable organizations. Do I think buying gum will help the world?  Not really. Especially this gum. There is nothing unique about Project 7 gum and it tastes bad, like it's been a hot car all summer.  Will Project 7's goal of one million new fruit tree plantings in Guatemala, El Salvador and Nicaragua change much?  Maybe...I'm not certain.  I'd rather write a check, though, than chew this gum. When I first pop this natural & artificially flavored, artificially colored and synthetically sweetened gum in my mouth; my impression is pinesol and dirt! I imagine the mint oils sourced for this gum are from foreign countries and unprocessed. Very … [Read more...]

Dentyne Pure Mint with Citrus Accents review

Safe Breath "Practice Safe Breath"?  A strange tagline, but this new Dentyne Pure does what it claims: my mouth feels very clean & refreshed after chewing. Dentyne Pure Mint with Citrus Accents is a dragee style gum (candy coated pellet) and has a soft liquid center that is bluish-green (like the package). Because this line of gum "purifies your breath", it is called Dentyne Pure. The unique item about this gum is that it has a blend of botanical extracts. I am guessing this blend of extracts is "Neutrafresh". But, I'm not clear about what "Neutrafresh" is. My Impression I didn't ask those closest to me if my breath was clean after chewing, but I felt like I had fresh breath. Mint with Citrus accents is a delicious gum. I … [Read more...]

UP2U Mentos Gum (Fresh Mint/Berry Watermelon) review

Youthful and Fun Good thing I learned to text, or I might not understand what UP2U meant. I'm technical, but occasionally behind the times, preferring to talk rather than text. This Mentos gum is definitely youthful & fun. Mint Berry Watermelon The first pack I tried was the Fresh Mint Berry Watermelon mix. When I took the gum out of the cellophane wrapping, I was overcome with aroma (creamy peppermint with some sour fruity character). I knew the flavor was going to be strong. The berry watermelon initial taste was a jammy berry with some floral and melon notes. Quickly, it went to a cool, but sour berry gum with green character. Then there was a minty taste, but with a bad ashy character. Initially, I would say the flavor was … [Read more...]
