Smoke flavor

Ribs My husband is trying to kill me. Slowly, like the way he smokes ribs on the barbecue. He loves smoke flavor and he has mastered the art of smoking and slow cooking meat. I find a touch of smoke flavor good, but I am certain too much is bad for you. Commercial Smoke Flavor Smoke flavor is made on a large scale and sold to bacon, ham, hot dog, rib, cheese, sauce and flavor manufacturers. Besides imparting flavor and color, smoke flavor is functional. It creates the skin of the hot dog, it is an antioxidant and an antimicrobial. Smoke flavor manufacturers buy lots of sawdust and burn it. They control the burn and capture the essence generated by the smoke. Sawdust is from wood which is about 40-60% cellulose and 2-30% lignin. … [Read more...]

Leave Well Enough Alone?

GRAS (Generally Recognized as Safe) In the August 2013 Food Technology, there is an article titled "GRAS: Leave Well Enough Alone" http://www.ift.org/Food-Technology/Past-Issues/2013/August/Columns/PERSPECTIVE.aspx.  GRAS (Generally Recognized as Safe) refers to food additives used in the USA. Our laws dictate that all ingredients added to our foods must be GRAS. We constantly add new GRAS materials to our food supply and many of these additives are flavor ingredients. The consumer will not always be aware of these new additives, because they are labeled with generalities such as "flavor". The Gaps in GRAS The article "Leave Well Enough Alone" are the thoughts of one person in the food industry. The author, Eric Greenberg writes … [Read more...]

Changes

Bawling My husband would not watch Steel Magnolias or the Notebook with me. He tried his best to watch a few scenes, but eventually retreated to the computer room and came out for a snack towards the end of these movies. When he saw me bawling my eyes out, he asked "is the movie good?", to which I quietly replied "yes". His response was head shake and a nod in disbelief. Poisoned The book Poisoned had a similar effect on me as the movies. I found myself crying as I read  it. Again, my husband queried, "do you like that book?". My answer was yes. When I shared some of the details about the children in hospitals dying from food poisoning, he replied "doesn't sound good". Poisoned, by Jeff Benedict," The True Story of the Deadly E. Coli … [Read more...]

“The Sky is Falling”

Society claims that flavor chemists are "people who add chemicals to foods" and that food safety specialists are "people who worry too much". In a recent Food Safety program I attended, one professor stated "food safety professionals can be compared to Chicken Little running around claiming the sky is falling". Worry can be un-healthy, but exists for a reason. My daughter suffers from excess worry and anxiety, something normal for a child that has endured a major illness. Something normal for a child whose parent has anxiety issues. My daughter had a brain tumor at age two and  I worried excessively during her treatments. At one point I couldn't stand straight or walk because of excessive worry. Unfortunately, after diagnosis, worrying … [Read more...]

Silk Fruit & Protein all natural juice blend, Strawberry Banana review & Non-Gmo Project

Silk beverages come with a "Love it Guarantee or your money back". There is no risk in trying the new Silk Fruit & Protein juice beverage. My family doesn't want our money back,we love it, especially my 5 year old.  She had 2 cups on her first try, with her only complaint the lack of bright pink color. As her mommy, though, I was relieved to see the more natural light pink hue in the soy milk. The lack of neon pink color meant to me that the product is colored with natural fruit and vegetable extracts. The strawberry banana flavor came across as extremely tart with a high amount of jammy strawberry flavor. The beverage was lacking banana flavor, but had a nice sweet vanilla note that came out at the end. I found that the beverage was … [Read more...]
