Cherry Flavor

"When their seeds are ready for transport, plants summon mammals with the strong scents and tastes of ripe fruit" (Michael Pollan, Cooked). Anyone who has had a cherry tree decimated by birds knows this. Animals cannot resist brightly colored, sweet, aromatic fruits. Mother nature has made fruit impossible to resist because she needs animals to spread seeds. Flavor scientists study mother nature and do their best to mimic her appeal. Our goal is to keep consumers happy and supply good tasting food. We study the aromatics naturally present in fruits as a guide for flavor development. I have created plenty of cherry flavors, but none were close to what mother nature has designed.  My cherry flavors have been benzaldehyde based, because … [Read more...]

Snapple Jelly Belly gourmet jelly beans, flavor review

In the early 90's Snapple became a beverage market success. Their tea and fruit blends (specifically peach tea and lemon tea) were so good that beverage manufacturers were asking flavor companies to create knock offs of the popular beverages.  At the time, Snapple was unique enough to use fresh brewed tea along with the best natural fruit flavors on the market.  Snapple didn't stop with teas, though, they launched quirky flavors like strawberry-kiwi and mango madness. They were creative with their flavors and they were fun. They had silly commercials and funny sayings on the lids. Now it is 2012 and I do not drink Snapple regularly.  Snapple was a phase that I out grew. Occasionally, I see a new flavor and give it a try, but I don't … [Read more...]

Jif® Chocolate flavored Hazelnut Spread, Flavor Review

Jif Chocolate flavored Hazelnut Spread

Flavor Chemists copy successful food & beverage products on the market. For a budding young Flavor Chemist, this is fun and rewarding. As our career moves forward, we want to improve on successful products. Jif's®Chocolate Flavored Hazelnut Spread is an attempt to improve on the already popular Nutella® Hazelnut Spread with Skim Milk & Cocoa. Improve, because Jif® has natural flavors; as opposed to artificial flavors in Nutella®. We want all natural food products. Jif® Chocolate flavored Hazelnut Spread is a failed flavor matching attempt and pales in comparison to Nutella®. Making artificial flavors into natural flavors can be extremely challenging. Both hazelnut spreads contain similar ingredients: sugar, palm oil, hazelnuts, … [Read more...]

Jet-Puffed Mallow Bits, Vanilla & Peppermint Flavor Review

Jet Puffed Mallow Bits

Jet -Puffed mallow bits are for those of us who eat all the marshmallows (marbits) out of Lucky Charms and nibble on the marshmallow packs that come with instant hot chocolate mix. I'm one of "those" people and I'm extremely grateful that Kraft decided to launch this product and that I can buy more at my local Target. Mallow bits come with serving suggestions: sprinkle on hot chocolate or ice cream, but the are a tasty treat on their own. The Peppermint ones are naturally flavored, beautifully colored, perfectly balanced and perfectly flavored.  I'm in awe.  The vanilla mallow bits use artificial flavor and are yummy at first, but leave a bitter aftertaste if over consumed.  Still, I'm impressed. Perhaps I shouldn't have over consumed, … [Read more...]

Dove Coconut Creme Silky Smooth Milk Chocolate Eggs, Flavor Review

Dove Coconut Creme Milk chocolate eggs

Just in: a new study finds that people who eat chocolate several times a week are leaner than people who don't eat chocolate regularly. Great news for those of us who consider chocolate a  food group. All the more reason to make a big purchase of chocolate this Easter! Dove is marketing a coconut crème chocolate egg for the holidays. Personally, I am averse to chocolate and coconut, but Almond Joy tastes good, so it's worth a shot. How are Dove chocolate coconut eggs?  They are ordinary. Ordinary because I'd like to improve the product by adding real coconut shreds to the coconut oil, natural & artificial flavor and skim milk center. Thankfully the coconut flavor is balanced perfectly with the milk chocolate: just a hint. There is … [Read more...]

Tic Tac Fruit Adventure flavor review

Tic Tac fruit adventure

Tic Tacs are a favorite sweet treat from my youth that I love to share with my children. Why overload kids with candy when a 2 calorie tic tac will satisfy? I had my two little munchkins in mind when I made this tic tac purchase. It's always good to have a pack of tic tacs in your purse; if you need to bribe your kids into behaving.   The flavors of Tic Tac fruit adventure are: 1)yellow: passionfruit or mango: It's very sulfury and floral. It reminds me of a canned mango or overcooked tropical fruit. My kids will not eat this one. 2) orange: sweet orange: Like St. Joseph's baby aspirin. It's not a juicy or fresh orange.  It's very sweet like tang drink powder. My kids like this one. 3) green: apple: This apple candy is … [Read more...]
