The orange peel contains the fragrance of the fruit, the "essential oil". An essential oil is different that a "fixed oil" (nut or vegetable oil) which is not fragrant. Flavor scientists value essential oils and they extract them so they can use them in flavors. These oils are excellent starting materials  for flavoring beverages, but they need to be modified to be useful. They do not "go into" a beverage. We modify the oils to make them "go in" or  make them "miscible". Basically, simplicity should be a key goal in design and unnecessary complexity must be avoided. Flavor scientists often add too many unneeded components to a flavor. Why? Because they are artists. Just when I thought I could not stand another pumpkin flavored product, I find this pumpkin spice egg nog from Darigold. A seasonal weakness of mine is egg nog lattes and I have been know to hoard several 1/2 gallon containers in my frig, so I can have these delicious warm beverages way into late January. I am happy to get a "jump start" on the season with this new pumpkin spice egg nog; even though pumpkin is a flavor that has begun to wear out its welcome. Starbucks President, Howard Schultz states,"we believe you should never be without great coffee". Amen. I am a faithful Starbucks customer. I know when I order a coffee at a Starbucks store, it will always taste amazing. Starbucks unflavored coffee VIA are excellent, the perfect accompaniment on a camping trip; where there is no coffee maker. Flavored coffee VIA is not always so  perfect. Balance is difficult to achieve. Often the flavors pop out, taste artificial and are not balanced. Pumpkin Spice latte is no exception. In the late 1970's, my father drank Lipton instant iced tea every night with dinner. I know this, because it was my "job" to make dad's tea. Pretty simple: 1 scoop of Lipton instant tea in a tall glass with ice cubes and water. Stir and serve.  Not fancy or flavorful, but convenient. Being a child, I complained about this chore. Things were different back then, though, we did not have ice makers in our freezers. We had handle ice-cube trays, that were very stubborn about releasing ice. Starbucks, you stole my idea!  Thank you, because I love your new Cool Lime Refreshers™. Seven years of my life were spent blending mint with all sorts of flavor combinations. My favorite mint variety to blend with fruity notes is Native Spearmint (Mentha spicata): herbal, green leafy, tea like and dry. Scotch Spearmint(Mentha gracilis) is preferred for chewing gum: creamy, green and buttery. Truthfully, I never perfected the mint blend: Starbucks did with their Refreshers™ Cool Lime. Some successful flavors I made were pear mint, melon mint and key lime mint.
